Closely related to artichoke but hardier. Silver foliage to 5 feet tall with dramatic stems to 10 feet tall. Pick new leaves in early spring and cook the stems as vegetable, or harvest the small chokes in early summer. Bees love the bright purple flowers. Grow in full sun, in well-drained soil. Drought-tolerant.
Start indoors in early February. Plant out when soil is warm.
Plant in full sun with ample room.
